Perfect Summer Salad Recipe: Garbonzo Bean Salad

This is my new favorite summer salad. It is so easy to make and so delicious. It's very flavorful and the chickpeas provide protein making this the perfect lunch. Even Ellie loves this so I always stock up on the ingredients at the store. I found this dish at Val So Cal.


Healthy Garbonzo Bean Salad

2 cans garbonzo beans (rinsed and drained)
1 red bell pepper, diced
1 yellow bell pepper, diced
1 English cucumber, peeled and diced
1 small red onion, diced
3 garlic cloves, minced
1/3 cup feta cheese
3 tablespoons fresh parsley
1 lemon, juiced
1 lime, juiced
1/4 cup olive oil
4 tablespoons red wine vinegar 
1/4 teaspoon each of salt, pepper, and oregano

Place rinsed beans in a large bowl. Add the next 7 ingredients. Mix olive oil, lemon, lime, vinegar and spices. Pour over bean salad. You can also serve with pita bread. Enjoy!
